Mastava is a rich soup with meat, rice and a large amount of various vegetables. To prepare, you need to cut the lamb into cubes and fry it with onions and garlic until it turns golden.
Then add carrots, pepper and tomato paste, then put in a pot with a small slice of tomatoes and steam on a slow fire. Then, the soup is filled with minced potatoes, spices (tint and black pepper), salt, and water. The dish is cooked on a slow fire for 10-15 minutes, and during this time, it is necessary to prepare rice in a separate pan. Usually, mastava rice is placed in a separate dish or added to each portion before serving so that it does not swell too much. The soup is traditionally served with a spoonful of sour cream and fresh kinza for decoration.
