38

Tashkent is a gastronomic paradise where every meal reveals the secrets of tastes that have absorbed centuries of culinary traditions and modern creative methods. The taste of the city is a mixture of ancient traditions, regional influences and modern tastes, which makes the gastronomic journey delicious and memorable. The dishes of Tashkent are known for their rich and aromatic dishes, which often include various types of meat (primarily sheep and poultry), rice, vegetables and a large number of spices.

Mashhurda

Mashhurda is a traditional Uzbek dish that is based on mash and rice, combined with meat and vegetables. Due to its rich composition, it is not only delicious, but also beneficial for health, enriching the body with proteins, vitamins and microelements. The preparation begins with roasting minced meat, onions, tomatoes and carrots, after which everything is cooked with the addition of water and mash, which gives the dish a characteristic aroma and saturation. A thick soup is prepared for about 15 minutes, then rice is added and left on a slow fire for the same amount. It is advisable to leave the mashhurda to cook under the lid for 10 minutes, so that the dish is filled with spices. The soup is served with a spoonful of fresh cream, which complements the delicious taste of the dish.

Dolma

Dolma is a dish made from grape leaves with meat and vegetable filling. To make dölma, the meat porridge is mixed with rice, onions and spices, then rolled into grape leaves. Vegetables and large pieces of meat are roasted to a golden color, after which the mashed grape leaves are laid in layers in a deep cauldron, filled with water, and smoked for about 40 minutes under the lid. Grape leaves give the dish a light sour taste that perfectly emphasizes the delicate taste of the dish.

Mastava

Mastava is a rich soup with meat, rice and a large amount of various vegetables. To prepare, you need to cut the lamb into cubes and fry it with onions and garlic until it turns golden. Then add carrots, pepper and tomato paste, then put in a pot with a small slice of tomatoes and steam on a slow fire. Then, the soup is filled with minced potatoes, spices (tint and black pepper), salt, and water. The dish is cooked on a slow fire for 10-15 minutes, and during this time, it is necessary to prepare rice in a separate pan. Usually, mastava rice is placed in a separate dish or added to each portion before serving so that it does not swell too much. The soup is traditionally served with a spoonful of sour cream and fresh kinza for decoration.

Chuzma Lagman

Chuzma lagman is a traditional dish with noodles, known for its rich taste and aromatic soup. The noodle dough is mixed with eggs, water, salt, sunflower oil and flour, after which it is pulled into thin rolls by hand. For the soup, the lamb is sliced in strips and roasted on a high fire. Then add garlic, onion and tomato paste. To preserve the rich taste, the ingredients are roasted, not stewed. Meat is served with sliced carrots, radishes, beans, bulgar peppers, tomatoes and potatoes. Then they are all poured with water and boiled for about 20 minutes, while the noodles boil in boiling water for about 5 minutes.
