Dolma is a dish made from grape leaves with meat and vegetable filling. To make dölma, the meat porridge is mixed with rice, onions and spices, then rolled into grape leaves.
Vegetables and large pieces of meat are roasted to a golden color, after which the mashed grape leaves are laid in layers in a deep cauldron, filled with water, and smoked for about 40 minutes under the lid. Grape leaves give the dish a light sour taste that perfectly emphasizes the delicate taste of the dish.
